A brunch favorite made Filipino style! We used Ninong’s Dessert Lab Ube Pancake Mix to make the “bread,” and replaced the ham with spam, and the jam with mango spread. Oh, and we added some Eden Filipino cheese for that creamy hit!
It all comes together very fast as you don’t make the pancakes on the stove top! It’s baked and done in 8 minutes. So perfect to make when you have guests over for that odd time of the day.
Ingredients

2 Cups Ninong's Ube Pancake Mix or alternatively, White King Ube Hotcake Mix

1 1/2 Cups Coconut Water

1 Can of Spam, Cut into 8 slices

1 Tablespoon of Olive Oil

2 Boxes of Eden Cheese Cut into 8 Slices (same size as the spam)

1/2 Cup Pan de Manila Mango Spread

1/4 Cup Powdered Sugar for dusting
Directions
Preheat the oven to 350.
Spray a 10x15 baking pan with coconut oil and line with parchment paper. It’s super important that you use this size of baking pan and line with parchment paper. The size gives you the optimal height for the pancake bread and the parchment paper helps get the baked pancake out of the pan with no issue. *Do not deviate from the plan!*
In a large bowl, mix together the pancake mix with the coconut water. Mix well until there are no lumps and leave to sit for 5 minutes.
After the resting time, spread the batter edge to edge on the baking pan. It will look thin, but this batter puffs up when baking. Make sure it’s all nice and even.
Bake in the oven for 8 minutes. After it’s done, take out of the oven and leave to cool fully.

Heat up a large fry pan or skillet and add the oil. Fry the spam for 3 minutes on each side until crispy. Transfer to a plate.
Take the pancake out of the baking tin, easing the bottom with a flat spatula. Place on a large cutting board.
Using 2 slices of spam as a guide, cut 8 even squares out of the pancake. You will have some small rectangle scraps left over. Eat those with some syrup!
To build the Monte Cristo, put one pancake square on a plate and top with cheese, followed by the slices of spam and finally the mango spread. Finish with the other slice of pancake. Dust with powdered sugar. Repeat for the other 3 sandwiches.
