Inspired by My Healthy Dish's viral Firecracker Salmon, we made a super Filipino version: SPAM TOSILOG BITES. It’s your favorite Filipino breakfast, wrapped in rice paper and lightly fried.
Yup, it has Spam Tocino and some yolky garlic fried rice (find our garlic fried rice recipe here) all wrapped up in a neat packet. Such a great option to make for a brunch gathering if you are super extra, or as appetizers for your next party.
Oh, and don’t forget to dip it in the spicy suka (vinegar)... Datu Puti of course.

Ingredients

1 Can Spam Tocino

2 Cups cooked garlic fried rice

2 Sunny Side Up Eggs (make sure you make them runny)

18 Pieces of 22cm Rice Paper (Three Ladies Brand or Rose Brand)

⅓ Cup of Datu Puti Pinoy Spice (Spiced Coconut, or tuba, Vinegar)

Large bowl of warm water

Olive Oil or Any Vegetable Oil
Directions
Cut Spam Tocino into 18 square pieces.
In a medium sized bowl, mash together the cooked garlic rice and sunny side up eggs, making sure the rice is coated with egg yolk.
Now set up your station. Have the spam, bowl of egg and cooked garlic fried rice, rice paper, and a bowl of water, all nearby, along with 2 plates.
Use one plate to form the bites and use the other plate to hold the bites until cooking time.
How to roll the spam tosilog bites (repeat the steps until you finish all the ingredients)
Soak the rice paper in warm water until it is hydrated. It should be very soft and sticky.
Carefully place on a plate, making sure the rice paper is wide open.
Place a square of Spam Tocino in the middle.
Top the Spam Tocino with about 1 teaspoon of the egg and rice mixture.
Fold over the top of rice paper over the rice, egg and spam.
Next, fold over the bottom.
Fold over the left side
Fold over the right side until you get a nice square packet.
Put on a plate and repeat.
How to finish cooking and serve
To cook heat up a large frying pan on low to medium heat. Add about 2 table spoons of oil.
Once the oil is heated up, add the Tosilog bites. Depending on the size of your pan, fit 4-6 at one time making sure there is space in between each bite so they don’t stick together.
Cook for about 10 minutes, flipping the bites multiple times until the skin starts to feel and look crispy.
Place on a serving platter along with the bowl of vinegar. So Sarap!
